The bridge is the large wooden piece that is glued to the guitar. The saddle is the white piece of plastic or bone that slides into the bridge.
If the shop had to replace the bridge on a new guitar they would have replace the guitar.
Have you tried 11 on your guitar? 10s are pretty light string to have on a dred. You may have to strum harder than needed to drve the top of the guitar
Translation problem . In German the “Sattel” is the nut. The white piece of bone on the fixed wooden “bridge” is called “Steg” in German. If you enter this into a translator, “bridge” is coming up. What I mean is the white inlay in the bridge.
