I probably missed this explanation during an earlier lesson, but when justin says move fingers “down” one string (from a minor to e) he is actually moving them up. I dont know how to read music…is this based on that or did he err?

Down means lower in pitch in these contexts. The E string is lower in pitch than the A string.
