Not fake. Not common, but Mark Knopfler plays finger-style on electric, and he’s as good as they come.
I am practicing finger style Blues and Spanish classical on a metal guitar (PRS SE Tremonti). It is more about the amp setup than the guitar intended design. I haven’t figured out how to get a true acoustic sound, but is certainly sounds nice with what I have. Sustain is a lot longer, brightness is intensified, bass seems to really stand out when the volume is a bit above talking level when using the electric. I have also practiced Metallica with a totally clean sound - it doesn’t sound bad. The angry element is usually missing, but I also can hear my mistakes quite obviously!!
There are certainly some differences that you cannot account for, so if you really need to duplicate the sound of a particular song, you will need to get gear that supports it. I have found that something sounding close is doing the job for me, so I suggest that it is not an important part of your starting decision here.
Considering the electric option (I do not have an acoustic), you have a varied set of examples in your opening question. I recommend looking into single coil vs humbucker and thinking about what sound you want to have. If you really want both, it usually costs a little more budget to get a pickup that is capable of both sounds. I chose to get two guitars, but that was a year+ after starting to learn.
For the amp, I think a clean sound you like with a reverb option would fit the blues part of your goal. Use the internet or your local guitar store to listen to examples. Listen to the general TONE of the amp, not the song. Separating that out makes more sense after some time playing, but see if you can keep that in mind when you are researching your choice. Most of the stuff you mentioned above is using a fairly clean tone - yes, even the AC/DC.
