Between open chord changes the open strings continue to ring out. Between barre chord changes all the sound stops when I lift the barre, and it doesn’t sound as right to me on changes. I noticed it a little when it was just an F between other open chords, but on songs with a lot of barre chords its sounds too stop and go.
I have not noticed this myself. Maybe it is to do with the action of your hand coming off the strings? If the barre comes off after the other fingers more slowly maybe it mutes the strings?

I get the same issue quite a lot, and it’s as David suggests. I developed a habit of lifting the barre fractionally after my other fingers, muting the chord. As with all habits it’s not an easy one to break, but I’m getting there slowly.
