This issue does not inhibit my playing but maybe a bad habit or even an itch I can’t scratch. So basically what happens is when I play a chord and then let go of those strings to change the chord, the notes ring out no matter what I do. Just to see how softly or quickly I need to take the fingers off, I tried everything from one extreme to the other. Also tried getting my fingers off at an angle. But all of that only resulted in sounds that ranged from extremely light pull offs to pull offs. I hope my question makes sense.
Am I overthinking this? Is this normal because google didn’t help. Is it my guitar? Idk man someone please help me out with this.
Some strings ringing out while chord changes is normal and can only be inhibited with muting (palm of strumming hand or fretting hand). But to fully understand your issue, we need to see and hear it.
The requested video of both hands will certainly help. there are several things that we could speculate on, so seeing it will narrow the possibilities.
I also notice this, more so with higher gain on electric. Some things I notice myself doing poorly:
Avoid coming off the strings at an angle instead of straight up. this might be moving to the next chord/note before I have left the ringing string
Coming off too fast, especially after a strong pluck. Coming off a little slower helps with time to stop ringing. In some cases, I have time to lift just enough to deaden the string then move.
I miss muting unused strings. If you haven’t worked up to Justin’s muting lessons yet, this will help a lot.
If your finger tips are still soft from just starting to learn, they will harden up and that will help the strings not stick to your fingers.
I also make heavy use of palm muting. Again, if you are not that far in the lessons, don’t get too concerned yet.
Having this in mind is good. Experimenting is great. It took me a long time - like maybe a year - to not feel unhappy with my extra ringing strings. It eventually worked itself out because I thought about it, and gave a little effort to what I experimentally found to help. I was really not placing a dedicated effort and eventually noticed that I was doing better. There are some things now that do take dedicated effort, but I have the tools from the lessons and know what I should have done.

I have this too but only on certain frets, it’s completely random where. It’s particularly bad when playing louder rock/metal as it causes a lot of extra noise with the higher gain. Probably a guitar issue, in my case a Squier Bullet HSS
