Well I could always name some random guitar that I don’t currently own and call it my dream guitar… but I’d be lying because I’m happy with what I have.
I could be outrageous and say that I’d like my own wall of Marshall amps but that wouldn’t be a good idea in my small semi detached house.
I think what would be most useful to me would be some lessons with a teacher
is this a single thing, or a periodically recurring raffle?
if single, I agree with the lessons as a big one for me. as far as guitars and amps go, pretty much just take your pick of nice gear. you’ll never find something everybody wants, but if it’s nice stuff, you’ll get people entering just for the chance to get something nicer than they’d otherwise buy.
not sure if this is a feasible thing for a one-off raffle, but a custom build from a luthier or amp builder or whatever would be pretty dang cool, too. someone’s gotta pay for this stuff, though, and it’s probably pretty unlikely that such small operations are going to toss a product in (that represents a significant expense for parts/labor) for a free raffle. if justin has some other sponsors to cover that cost, maybe?
it you’re talking about something that’s potentially recurring, then more modest items. fancy multifx pedals for lower frequency. less expensive (but still useful and desirable) pedals if higher frequency. packs of consumables like strings and other instrument care products. maybe other recording or performance gear like audio interfaces, microphones, PA speakers, etc?
I honestly can’t speak to anything terribly specific, though. I’m one of those folks who would enter most raffles for the chance to get something I wouldn’t otherwise buy or something I haven’t bought yet.

The initial list and the ideas from the commenters above are already well rounded (especially the lesson-idea sounds striking). Another thing came up while reading Nate’s ideas was a well-chosen guitar maintenance toolkit having all the essentials and a little stuff beyond in it for doing own setups.
In case something else comes to my mind, I’ll drop in again. Cool stuff.
If you want to stand out against the usual pattern of this sort of thing, offer a left-handed guitar as an option. I’ve never seen this in any giveaway, raffle, competition.
I think some free lessons with Justin or any of the other teachers would be an appropriate prize that will suit any level of player.
A specific guitar model is a personal thing and whatever model chosen, it won’t appeal to everyone. Things like pedals or pedal boards are also not ideal as lots of people won’t use them much or as a beginner won’t know how to use them effectively and it should be a prize anyone can enjoy.
But who could resist free lessons with these great teachers!
