Good suggestion, with a minor caveat: as it happens I recently bought a PRS S2 Special semi-hollow and I also own a vintage Gibson ES-335 12-string. Both are wonderful guitars but they are also quite different as semi-hollows. I think my Ibanez Artcore Expressionist feels much closer to the ES-335 than the PRS. That said, Sweetwater has a number of PRS SE semi-hollow models for around $1K USD, which probably fits the OP’s notion of “medium” budget and might suit them well.
